Lavender Grapefruit G&T


  • 1½ oz. Bombay Sapphire
  • 3 oz. premium tonic water
  • 2 lavender sprigs, for garnish
  • 2 Tbsp. lavender buds
  • ½ oz. lavender syrup
  • ½ oz. cup water
  • ½ oz. cup sugar
  • ¼ red grapefruit, plus ½ wheel for serving


  1. In a small pot, combine the sugar and ½ cup water. Bring to a simmer over medium heat, stirring until the sugar is dissolved.
  2. Remove from the heat and transfer into a heatproof container. Add the lavender buds. Let cool to room temperature then transfer to the refrigerator. Strain the simple syrup into another container; discard solids.
  3. Add lavender syrup to the balloon glass and ¼ of a grapefruit with the peel on. Muddle gently to release juice. Next, add the Bombay Sapphire Gin.
  4. Fill the glass with ice and pour in the tonic. Garnish with a grapefruit and lavender blossoms. Lastly, smile and look at what you have made and enjoy!
