Clean Keto Balsamic Chicken and Veggies


  • 1 ½ lbs chicken tenders
  • ¼ cup balsamic vinegar
  • ¼ cup Italian dressing
  • 1 cup mushrooms
  • ½ cup cherry tomatoes
  • 1 bunch broccoli rabe
  • 2 tsp Italian seasoning
  • 2 tbsp olive oil
  • parsley for garnish


  1. Preheat the oven to 400°F.
  2. Whisk together the balsamic vinegar and Italian dressing. Set ¼ cup aside and pour the remaining in a large bowl. Add chicken and let it marinate.
  3. Slice the mushrooms and cut the tomatoes in half. In a medium bowl, combine mushrooms, tomatoes, broccoli rabe, Italian seasoning and olive oil. Season with salt and pepper.
  4. Use a non-stick sheet pan or line the sheet pan with parchment paper.
  5. Add veggies to the tray first. Roast for 15 minutes.
  6. After 15 minutes, add the chicken and roast for 10 minutes or until chicken in 165°.
  7. Brush remaining sauce on chicken and garnish with fresh parsley.
