Ingredients

  • 1 medium pineapple,
  • 5 large limes,
  • 1 L Perrier Water,
  • 1 bunch of mint,
  • 1 tsp natural sweetener (I used coconut nectar but you could use agave or to make sugar free use monk fruit),
  • 4 cups ice,
  • 4 oz of rum (optional)

Instructions

  • Preheat grill or BBQ grill to medium high.
  • Slice Pineapple into 1/2 inch rounds circles. Keeping the skin and core on.
  • Place on hot grill to obtain grill makes. Cook on either side for 3 mins each.
  • While pineapple is cooking wash mint and shop 1 cup of leaves without stems.
  • Remove pineapple from grill and let cool on a plate.
  • Take 4 limes and juice them. Set aside juice.
  • Take 4 rounds of pineapple and cut off skin and take out core. Chop into small pieces.
  • To assemble drink place 1/4 of the cut pineapple in each glass and 1/4 of the mint.
  • Muddle the mint and pineapple with a muddler, then add your choice of sweetener and lime juice.
  • Top with ice and fill glass with perrier water.
  • Stir with a stir stick or spoon.
  • Garnish with lime, pineapple, and mint.
