Grilled Peach Burrata with Mint Vinaigrette
INGREDIENTS
3 cups arugula
2 ripe peaches, sliced
1 cup cherry tomatoes
1/2 small red onion, thinly sliced
1 large burrata cheese
extra virgin olive oil
BASIL MINT VINAIGRETTE
1/3 cup extra virgin olive oil
1/4 cup fresh basil leaves, chopped
1/4 cup fresh mint leaves, chopped
juice and zest of one lemon
1 tbsp honey
1 tsp dijon mustard
1/4 tsp pink salt or to taste
INSTRUCTIONS
Drizzle sliced peaches with extra virgin olive oil and toss to combine. Grill for about 2-3 minutes per side or until grill marks appear.
In a mason jar combine all the dressing ingredients. Shake to combine.
Assemble the salad. On a large platter layer arugula, grilled peaches, tomatoes, red onion and torn up burrata cheese. Drizzle with basil mint vinaigrette right before serving.
